Oh, it’s no joke that every one of us aren’t quite ourselves when we get hungry, right? I mean, let that sugar crash or don’t eat a healthy breakfast, and we all turn into monsters by midday.
Okay okay, maybe I’m just talking about me and my family, but I have a feeling there’s many of us out there who can say that inner beast comes a knocking when it’s food time.
My No-Bake SNICKERS® Oatmeal Bites are the perfect bite sized cookies. They’re coated with SNICKERS® chocolaty goodness, and make the perfect little afternoon snack for when we’re not feeling quite ourselves.
We always joke in my house that we turn into angry monsters when we’re hungry (some of us more than others, lol) I actually feel more like a zombie but hey, neither is a great feeling right? Grumpy hungry Me is not a fun person to be around (for that matter, neither are my kids and hubby when they’re grumpy and hungry too).
A little burst of chocolate goodness is a plus in my book, especially when it involves SNICKERS® (one of my favorite candy bars). Upon checkout at my local Winn-Dixie grocery store the other day, I discovered a few kinds I’ve never had before- SNICKERS® Extreme, Peanut Butter Squares, and Almond. I snatched up several of the PB Squares and the Almond for my recipe, because I honestly couldn’t decide which I wanted to use more. I ultimately used the Almond, although any of them would be great.
This is a recipe my mom used to make when we were growing up. I imagine she had these cookies on hand for when her own sweet little angels got a bit grouchy-hungry.
The difference is, she never coated hers in SNICKERS®. When she came by the house the other day, I had some on hand, and she loved them! When I told her the tasty, crunchy coating was ground candy bars, she couldn’t believe it. It added just the right touch to an already delicious and easy recipe.
4 SNICKERS® bars (I used SNICKERS® Almond bars)
2 cups of sugar
1/4 cup of unsweetened cocoa
1 stick of butter
1/2 cup of milk
1 cup of peanut butter
1 tbsp vanilla
3 cups of oatmeal
Chop SNICKERS® bars in food processor, set aside.
On low/medium heat, stir in sugar, cocoa, butter, and milk until boiling. Stir often, try not to scrape the sides of the pan.
Once mixture becomes a boil, remove from heat and mix in peanut butter, vanilla, and oatmeal.
Refrigerate for 15-20 minutes or until cool enough to handle.
When cooled sufficiently, roll into bite sized balls, and coat completely in the chopped SNICKERS®.
Let the bites cool completely on waxed paper before serving.
