Part of the magic of this season is sharing holiday joy with friends and family.
This is the first year my daughter is 400 miles away for college, and with the holidays upon us I think she and I are both feeling a little homesick and ready for her to be here. I asked her what she and her dorm mates are doing to still feel festive before they all get to go home during Christmas break, and she said it’s a tradition in her hall to have BYOMug nights, where they share recipes and make mug cakes in their microwaves. Cooking in the dorms is extremely limited, yet they’ve found a way to make it work while spending quality time with friends.
So, I had her share her favorite recipe with me- the Chocolate Coca-Cola Mug Cake. It’s so simple and delicious that I decided to make a jar full of the dry mix to keep on hand, so when friends stop by here this holiday season we can share a mini cake together.
A new holiday tradition perhaps?
I hope so!
I already had the dry ingredients for the mug cakes at home, but needed the Coke. So, knowing that Sam’s Club is carrying a 4-pack of 2-liters in Coke and Diet Coke for only $3.98 during the holiday season, I headed that way.
A craft idea was already starting to take shape in my mind, so while I was there, I also picked up a box of 24 of the glass bottles of the Coke de Mexico (did you know that these are made with real sugar and no high fructose corn syrup?). Using these glass bottles as part of a Christmas display, I just knew I had the cutest idea of how to pair them with the mug cakes to be used as gifts.
Of course, before sharing the mug cakes with friends at all, I needed my family to try her recipe and be the taste testers. They didn’t mind one bit!
Making these mini cakes is very simple.
All you need to do it mix the dry ingredients together in the mug, add the Coke, and stir well until all the ingredients are blended.
Cook in the microwave for about a minute and a half, then top the cake with ice cream or whipped cream, festive sprinkles, and enjoy!
It really is the easiest recipe for college kids and for serving visiting friends and family a special chocolaty treat.
It’s a good idea to premix the dry ingredients and have them in a mason jar ready to gift to a friend. Tie a piece of fabric around the neck of the jar to look like a winter scarf.
Save and print this instruction label image, add it to the jar, and you’ve got the perfect gift for friends and neighbors.
But that’s not all!
You can’t just give your friends the dry ingredients for the chocolate mug cakes, you’ll also need to send them with the Coca-Cola so they’ll have everything they need.
And there’s no reason to send them with a plain bottle when you can decorate them to look like adorable little Christmas Elves.
The hats & scarves are simple to make, I promise.
You’ll need festive fabric scraps, cut into about 7” squares.
Cut a triangle out of each corner of the square. One square should make two elf hats and two scarfs.
Roll the sides of the triangle together to make a pointy elf hat & hot glue it together along the seam.
Trim the bottom to make the cap even.
Fold the bottom of the cap up, and put it on the glass bottle.
Cut a longer strip of fabric and tie it around the neck of the bottle as a scarf.
You can create an entire box of these adorable Elf Coke bottles to display during the holidays.
Let your friends pick their favorite one to take home along with their jar of cake mix.
