In the heat of the summer it’s hard to imagine back to school already, but in reality it’s not too far off. Whether you’re fully involved with your summer vacation, or are already thinking ahead to the fall, easy family friendly meals for busy families are a must. A quick trip to Walmart for ingredients and about an hour of your time is all that’s required for this delicious Italian chicken and rice dish. This creamy Italian chicken and rice is one of my go-to meals for my kids. And my hubby loves it too, bonus! It’s actually a recipe that one of our babysitters passed to me years ago. When my husband and I came home one evening and she said “So, your kids loved the dinner I made, they ate it all” I was like “Girl, gimme the recipe!”
I’m willing to bet that you’re like me, and don’t want to spend a lot of time in the kitchen on the busy evenings. You’d rather be hanging with the family, enjoying all the precious moments you can. This recipe requires about 10 minutes on the stovetop and mixing ingredients, and the rest is just setting it aside and waiting for it to be ready. Simple!
I purchased all my ingredients at Walmart, because I like to get great deals on the essentials. The Swanson® Premium Chicken in this recipe is already cooked and ready to use, not to mention low fat & heart healthy. And everyone knows that families love the great taste of Campbell’s® Condensed Chicken Noodle Soup, which makes this the perfect partner to the rice dish.
- 1 12.5 oz can of Swanson® Premium Chicken, drained
- 1 box chicken rice
- 1/4 cup Italian dressing*
- 1/4 cup mayonnaise*
- Make rice on the stove top according to box directions.
- When rice is finished, stir in canned chicken & move to a large mixing bowl.
- Stir in Italian dressing, and then mayonnaise & mix well.
- *You can use a little more or a little less dressing & mayo than the ingredients call for, according to your own taste.
- Chill in refrigerator for 30 minutes to an hour, or until chilled through.
A tip for quick meal prep is to measure all the ingredients first and keep them right with you. That way you’re not scrambling thought cubbords and the fridge while your food over cooks.
Begin by making the rice in a skillet on the stove according to the box instructions.
When it’s ready, stir in the Swanson® Premium Chicken and transfer the chicken and rice mixture into a large bowl. I only use one can, but you want even more chicken, feel free to add another!
Then add your Italian dressing. I’ll sometimes taste after the first 1/4 cup and decide if I want to add just a tad more, or if it’s good as it is.
Last, add the mayo (again, taste test if you’d like), and stir thoroughly.
Refrigerate 30 minutes to one hour, until the dish cools.
While the rice cools, you can add a can of soup to simmer on low on the stove so it’s ready when the rice is.
For a well rounded meal, pair with fresh veggies or fruit, or a salad and your bowl of soup! Add a tall glass of V8 Splash® so you can feel good about the great taste and nutrients for your family, and voila!
You’re dinner is ready to go, and you’ve only taken about an hour of your evening!
