If your house is like mine during football playoff season, you’ve heard or seen just about every playoff game in sight, all leading up to that BIG GAME in February! While the football lovers chill in front of a big screen or two, I’ve got the perfect recipe for any homegating party. This caramel smothered SNICKERS® soda cake and caramel topping is so simple to make, but your guests will never know it because it tastes like you’ve been working on it for hours.
Just beware, because you may not be able to get your guests with a sweet tooth out of your kitchen once your cake is ready. Yes, it’s that good.
Everything you need to make your cake can be purchased at your local Walmart. The SNICKERS are found in the candy aisle. I used the fun sized bars, but you can use any of the bags available.
I also made mine in a fluted baking pan because I wanted the look of the bundt cake to drizzle the caramel topping over. This does effect the cooking time compared to a regular sheet cake, but I’ll give you the instructions to cook yours either way.
If you’re cooking this on game day, go ahead have it baked and out of the oven before the game starts. This way you can enjoy the game while it cools, and like football, it builds anticipation until half time when you can top it with the caramel sauce and serve warm. You’re guests will love you for it.
Caramel Smothered SNICKERS® Soda Cake Recipe
Ingredients:
One box of white cake mix
12oz Diet Sprite
Three egg whites
6-7 (or more if you like) SNICKERS fun size candy bars
Directions for baking a bunt cake (like shown):
In a blender or food processor, chop the SNICKERS bars until coarsely ground.
In a large mixing bowl, combine soda, cake mix, and three egg whites, and blend well for approximately 4 minutes.
Gently fold in 3/4 of the ground SNICKERS, reserving 1/4 for the caramel topping.
Bake in well greased and lightly floured fluted pan for 60-65 minutes until a toothpick returns clean.
*Important* Let cake cool before removing it from pan, about 30 minutes.
Directions for a regular sheet cake:
Follow steps 1-3 above, but add and mix well 1/2 tsp of flour to the ground SNICKERS so that they don’t sink to the bottom of your cake batter when cooking.
Cook according to the time shown on your box of cake mix.
You’ll notice all the beautiful dark brown speckles on the top of your bundt cake when you remove it from the pan. This my friend, is the SNICKERS candy! This is why you don’t flour the candy it if you make the bundt cake because you want it to sink when baking, which is really bringing it to the top of the cake. Don’t worry, it doesn’t all sink anyway and you’ll have a fantastic sprinkling of SNICKERS throughout the entire cake when you slice it open.
Once your cake is cooled enough to remove it from the pan, it’s time to make the caramel topping.
Caramel Sauce Topping Recipe:
Ingredients:
Reserved ground SNICKERS bars from cake recipe
1 cup white sugar
2/3 cup sweetened condensed milk
1/2 cup of water
1/2 stick of butter
Directions:
*Tip* At no point when you’re making this sauce should you scrape the sides of the pan.
This will result in crispy flakes of sugar getting in your creamy sauce, and you don’t want that (trust me, I know from experience)
In sauce pan combine sugar and water and heat till boiling, stirring occasionally. Then, boil for approximately 12 minutes without stirring.
Slowly stir in condensed milk and butter.
Stir until creamy golden color develops and consistency is smooth, and remove from heat.
When slightly cooled, pour over cake until drenched.
Sprinkle reserved SNICKERS on top.
Let cool 5-10 minutes before serving.
Bonus decorating tip:
With remaining fun size SNICKERS candy bars, use white icing to pipe on lines to create mini-footballs.
Use for decorating around your cake. Or, just eat and enjoy!
The combination of caramel, chocolate, and peanut buttery tastes make this cake a win win win!

That started out like a Weight Watcher recipe, the soda cake, helps cut down on the calories – I've used Devil's Food cake and diet cola, w/o adding any eggs and it doesn't need any icing.. tho, w/o the eggs it doesn't last as long as cake would… but not that it would, since it is eaten up… VERY moist.. might have to try this one out.
