My family loves breakfast food. Maybe it’s silly, but one of our dinner favorites is actually breakfast, especially homemade pancakes. Pair them with fresh fruit, bacon, sausage, or eggs, and you can’t go wrong. And for the grown-ups, coffee on the side is a must.
I love all things Fall and pumpkin spice related, I just can’t help it. So last year on a whim one evening, I created my vanilla pumpkin spice pancakes, using coffee creamer. The kids loved them! I couldn’t tell you how many times I’ve made these pancakes since then (even in the Summer). When I saw that Walmart is now carrying their International Delight® Creamers in the half gallon size, it made me very happy.
There’s something special about beginning or ending your day with a cup of coffee and delicious food. My favorite spot to relax has become our back porch. I enjoy grabbing a book and spending a few minutes to myself.
It’s easier to just bring the creamer and a carafe outside with me to refill my cup. I’ve decided that the International Delight® Caramel Macchiato is my favorite. You’d think that holding a half gallon size creamer would be difficult to hold and pour, but it’s not. It’s got a new shape that makes gripping it easy.
When I pair my vanilla pancakes with my perfect coffee, I’m in heaven. Even if it is still 90° outside, there’s something about the vanilla and pumpkin spice flavors that just say “Fall is Here!”
Okay, so maybe that’s a stretch in Florida, but still.
Vanilla + Pumpkin Spice = Fall
Okay, back to the Vanilla Pumpkin Spice Pancakes Recipe
Here are your ingredients:
2 Cups of pancake & waffle mix (I used Bisquick original pancake & baking mix)
3/4 Cup of International Delight® French Vanilla
1/4 Cup of water
1 Tsp Pumpkin Pie Spice
Mix all ingredients well.
Grease & heat griddle, and add pancake mix 1/4 cup at a time.
Flip when pancakes begin to turn dry on the edges.
Top with butter, syrup, or a dash of powdered sugar (or all three, yumm!)
Truthfully, any of these flavored creamers could be used, and would be equally as delicious!

International Delight® Caramel Macchiato
International Delight® Cold Stone Creamery™ Sweet Cream
I found mine in the refrigerated section by the milk.
