
Summer = hot weather.
Which means we want to eat fresh, cool, delicious foods.
This refreshing recipe for pickled, or refrigerated, cucumbers and onions is one that my father-in-law wrote down for me years ago. My husband makes these all the time, but somehow he never knew I actually have a recipe card in his dad’s handwriting until the other day.
I showed it to him and he was almost in tears over it, because you see, his dad is no longer able to write after a debilitating stroke a few years ago.
Although these days online recipes (like this one) are really the thing to use, in recent years I’ve made it a point to collect recipes when I can from friends and loved ones, in their own handwriting. It’s moments like that which remind you how important the little things are.
So, I hope you enjoy these cool summer snacks as much as we do!

Ingredients:
3 fresh cucumbers
1 medium sweet onion
1 1/2 C. sugar
1 T. salt
1/2 C. vinegar
Directions:
Thinly slice cucumbers and chop onions, layer in jar.
Combine remaining ingredients in sauce pan & heat on low/medium until sugar & salt is dissolved.
Let cool then pour over cucumbers.
Refrigerate and enjoy!
