Can you believe it’s already time to start thinking about back to school? My kids return on August 10, so I’m already in preparation mode. I’m shopping the best deals on school supplies, clothes, and even groceries.
When it comes to meals for our busy school week, my crock pot is my go-to. There are so many kid friendly recipes that can be made ahead of time, frozen, and then put in the crock pot first thing in the morning. The trick to saving both time and money is to shop the sales and create recipes using the ingredients you find. For example, right now at Walmart, you can find Pace Salsa, Prego Italian Sauce, V8+Energy drinks, and Campbell’s Chicken Noodle Soup on sale. Plus, you can take advantage of these coupons for even more savings.
This recipe for my crock pot chicken tacos is the perfect back to school recipe. At Walmart, I purchased two Pace Salsas on sale, a 5 lb bag of frozen chicken breast, and enough of all the other ingredients to make two full meals of these tacos. That’s going to be two meals ready to go for back to school, and all I had to do was shop smart, and prepare them ahead of time.
Just gather all the ingredients now, place them in a gallon size ziplock bag, and freeze until you’re ready to cook.
During the school year, my two high have sports and band until 6PM. Those older two boys are hungry when they get home, and waiting to eat is definitely not on their agendas. Having the meat for tacos ready when they walk in is a lifesaver.
Top chips, tortillas, bowls, or shells with the meat, and layer with your favorite toppings.
4 large boneless, skinless chicken breast, frozen
1 16 oz jar of mild Pace Salsa
1 10.5 oz can whole kernel corn (drained)
1 packet of taco seasoning
1 Tbsp fresh cilantro
Sprinkle taco seasoning on chicken, place in crock pot.
Pour corn and salsa over chicken.
Top with cilantro.
Cook in crockpot on low 6-8 hours.
Shred chicken, and serve.
Place all ingredients in a gallon size ziplock, lay flat, press out air, and seal tightly.
After cooking on low for 6-8 hours, the chicken is tender, juicy, and shreds perfectly.
The kick of genuine south west flavor in the chicken from the Pace Salsa pairs perfectly with rice and fresh fruit on the side. Add a V8+Energy drink (for some natural energy from green tea), and you’re set.
