
What are your most happy childhood memories?
For me, some that stand out are eating breakfast as a kid at our table before school with my bother & sister. Usually over a bowl of cereal, we’d chat with my mom while she worked around the kitchen preparing for the day. Actually, it seems like a lot of my memories are centered around our kitchen, and family meals together. One of the family favorites for dinner was when she’d make us sweet & spicy baked chicken nuggets, coated with Honey Nut Cheerios™and cajun seasoning.
My sister and I both agree to this day that they’re some of the best chicken nuggets on the planet.
First of all, grind the cereal in a food processor until finely ground.
If you don’t have a food processor, you can smash a cup at a time in a gallon size ziplock bag by rolling a pin or a heavy glass over the bag.

Next, season the chicken generously with cajun seasoning.
Then, cut chicken into nugget size pieces.

Put chopped Cheerios™ on a plate.
Dip the nuggets into barbecue sauce to coat, then roll the chicken in the cereal until fully coated.

Spray a baking sheet with non-stick spray & add coated nuggets.
Bake at 425 for approximately 25 minutes.
The breading on the nuggets should be a nice golden brown and the juice of the chicken should be clear.
Pair with your favorite dipping sauce and enjoy!
Dipping sauce suggestions-
Honey
BBQ sauce
Ranch dressing
Ketchup
Ingredients:
2 lbs chicken breast, thawed & cut into nuggets size pieces
3-4 Cups of Honey Nut Cheerios™
1-2 T cajun seasoning
1 cup BBQ sauce
Directions:
