
Pasta is the ingredient of choice for May’s Ultimate Recipe Challenge hosted by The Kim Six Fix.

Many pasta dishes are family friendly, and this one is no exception. With the combination of pasta, sausage, spinach, beans, and cheeses, it’s sure to please both the most hearty and picky of pallets.
Ingredients:
10-12 oz Tri-Colored pene pasta (depending on your family size)
13 oz hardwood smoked turkey sausage (or polska kielbasa, either taste great)
2 cups fresh spinach
1 tbsp olive oil
2 cloves garlic
1/2 cup chicken broth
1 can navy beans (drained)
3 tbsp grated Parmesan
3 tbsp shredded mozzarella cheese
salt and pepper
Directions:
Boil water and cook pasta
Slice sausage into 1/4 inch pieces.
Warm olive oil on medium heat in large skillet.
Saute garlic and onions about 5 minutes.
Add sausage and cook about 8 minutes or until cooked through.
Add broth and spinach, stirring until wilted.
Transfer to large bowl, and sprinkle with parmesan and mozzarella cheeses, mix well.
Add salt and pepper to taste.
