Strawberry Lemonade Cupcakes

What comes to mind when you think of a Summer foods? Most likely, something refreshing and cool. Something delicious and mouthwatering. Sweet maybe? This recipe for strawberry lemonade cupcakes has you covered! Sweet and unique, these cupcakes are sure to be crowd-pleaser at your next summer party.

Strawberry Lemonade Cupcakes
It’s time again for another round of The Ultimate Recipe Challenge hosted by The Kim Six Fix, and the challenge ingredient this month is strawberries.
One of my favorite recipes books is called You Be Sweet. I actually won it several years ago in a giveaway one of my favorites authors was hosting on her blog. I’ve made many of the recipes in it, my favorite has always been the cobblers. However, for this month’s challenge I decided to pull from a few recipes included in this book and combine them into one absolutely delicious cupcake.


This frosting is true to it’s name and tastes just like lemonade. The strawberry cupcake and lemonade frosting flavors combine perfectly, and topped with a slice of fresh strawberry, it’s perfection in a bite.

For the cupcake portion, I used a super simple and even a little “better for you” soda cake recipe. 
And the frosting is easy as well. The entire recipe yields approximately 24 cupcakes.

Cupcake:
 
 
1 box of strawberry cake mix
12 oz Sprite Zero
 
Mix well until blended. 
Pour into cupcake liners in muffin tin
Bake at 350 for 18-20 minutes
 
Frosting:
 
 
 
4 Tbsp butter softened to room temperature
2 cups powdered sugar
2 Tbsp pink lemonade from concentrate
2 Tbsp whipped cream 
Fresh strawberries for garnish

Mix together first three ingredients, and slowly add whipped cream. Mix until smooth and creamy. Pipe onto the top of cupcakes. 
Keep in mind, the flavor is rich so it’s alright to use the frosting sparingly. 
Top with fresh strawberries. 

I think these would be perfect for a baby shower, bridal shower, or even a birthday party. You can add a little food coloring to the white frosting to make it any color you’d like.
