
When you think of warm weather cooking and baking, are you like me and instantly crave fresh, zesty flavors?
Doesn’t the sound of “Lemon and Orange Vitality Cookies” hit that mark then?
Ya’ll, these cookies will plunge you right into daydreaming of a warm weather tropical paradise. The tangy sweet citrus and lemon flavors melt in your mouth, and I bet you can’t eat just one.
I was first introduced to essential oils about a year ago, and I had no idea that there is an entire line of Vitality oils that are used and are safe for consumption. Well, I didn’t know much about oils at all except that I wanted to begin a journey of wellness for my family that didn’t first begin with OTC stuff.
When I went to my friend’s house who introduced me to the Young Living essential oils line, she served us brownies made with the peppermint oil. They were delicious! She simply added a drop or two of the peppermint vitality oil to her brownie mix, and I’m not kidding when I said they tasted like Christmas.
Just like these Lemon & Orange Vitality cookies taste like summer.
Before I begin, you may be wondering about the vitality oils. I mean, what? Put essential oils into your food? Huh?
Yep, that’s right, you add them just like you’d add any other spice, or vanilla extract, or anything like that.
Now, I will go ahead and say I’m not familiar with other brands or lines of essential oils other than Young Living to know if they have similar types of consumable oils, or their purity.
I’d definitely do your homework and research before using them in a recipe.
Maybe there’s some other great ones out there, I just don’t know.

Lemon and Orange Vitality Cookies – Cooking with Essential Oils

Directions:
First, in a large bowl, combine 1 ¼ cup of pancake mix, baking soda and baking powder together and set aside.

Next, in another bowl, blend together butter and sugar until smooth.
Then, add egg, vanilla, oils and zest. Blend well.




Next, slowly combine dry ingredients while mixing.

Don’t worry, if dough is too sticky to roll into ball shapes, add a little more pancake mix until its more stiff and easy to roll.

Last, roll into balls and place of parchment lined cookie sheet or ungreased cookie sheet and bake at 375 for 8-10 mins or until golden brown around the edges.

Lemon and Orange Vitality Cookies | Cooking with Essential Oils
Ingredients
- 1 ¼ – 2 cups of Pancake mix

- 5-7 drops of Lemon Vitality
