This sweet treat is yummy any time of the year, but it's especially perfect for the Fall season. Make this caramel pumpkin cheesecake dip at your next holiday party and it's sure to be a favorite! In a medium saucepan, combine the caramels and the heavy cream and cook on low, stirring constantly, until they are well combined. Let cool 15 minutes. In a mixing bowl, beat the cream cheese until light and fluffy. Mix in the pumpkin, brown sugar, vanilla, and pumpkin pie spice until combined. Fold in the cool whip. Layer alternate layers of dip and caramel sauce in a serving dish and serve immediately.
