EASY Cookies & Cream Cereal Bar Cookies {Recipe}

August 20, 2013 by Molly

So, my kids officially went back to school today. Just because school is back in session, I don’t think it’s too late to create some final summer memories (it is, after all still August and 90˚) but I’ll mix them in with memories of beginning a new school year.
Thanks to a great recipe I found on  the Karo Surup website, I scored some serious cool mom points when I had these ah-mazing chocolaty cookies & cream cereal bar cookies for them as an after school treat.

I can’t emphasize enough how easy these were. Isaac, my brand new Kindergartener, is always willing to help in the kitchen, so it was fun for him to mix the ingredients in the bowl while I heated the syrup and chocolate on the stove.
Josh, my second grader, was happy to help put some sprinkles on top and press the cookies into the pan.

Thankfully, we didn’t have to wait long for them to cool off in the fridge. When they were ready, we sliced right into them like a cake.
Oh, soooo good. Super sweet and chocolaty, they were a crowd pleaser. Paired with a glass of milk, these sweet treats hit the spot. Because I didn’t want the kids to sugar crash, I cut them into fairly small pieces, so they became the perfect bite-sized treat.

*UPDATE* Okay, on my second batch of these, I thought I made them the same way, but when I cut into them, they crumbled. To the point that I literally dumped the entire pan back into my mixing bowl to start over. What I realized is that I didn’t let the syrup and chocolate BOIL before pouring onto the cereal, and it wasn’t hot enough to set. Apparently this is quite important. So, I boiled a bit more syrup and it was perfect. Anyway, just thought I’d share in case you find yourself with crumbly cookies also.

While I’ll never claim to be a chef extraordinaire, I’ve found that cooking from scratch is actually quite rewarding. And, when I get the kids to help out, I enjoy the quality family time that can be found right in my own kitchen.

Karo
syrup is a trusted product that has helped people create beautiful,
delicious desserts for more than 100 years. It is the only widely
distributed brand of
corn syrup that contains 0 grams of high-fructose corn syrup.
This recipe and many more can be found online at Karosyrup.com and also on Karo Syrup on Facebook.
