
Did you know that the only time St. Patrick’s Day is not on March 17 is if it falls during a Holy year? The last time that happened was all the way back in 1940.
That means, if you’re planning to celebrate the holiday, you’re probably pretty safe betting from year to year that it’s going to fall on the 17th. And that also means you’ve still got plenty of time to plan and make this super fun and colorful trifle dessert this year.
Featuring a layer of rainbows and of course green pudding, your trifle will not only taste great but look soooo fancy too. These are always so easy to make and if you’re trying to impress your friends, trifles are the way to go.
Trifles are traditionally fruit and cake layered desserts, but lucky for us, they can be made with many variations.
The addition of the Fruity Pebbles cereal to this particular recipe actually gives this one a lot of fresh, almost Springy (is that a word?) flavor.
How to Make a Rainbow Layered Trifle Dessert
Ingredients:
- 1 box of family size brownie mix
- 1 large 5.1 oz box of vanilla instant pudding
- 1 box of Oreo cookies
- Fruity Pebbles cereal
- 1 large 16 oz tub of original Cool Whip
- Green food coloring
Prepare brownie mix as directed on box, set aside and let it cool completely.
In the meantime, prepare the vanilla pudding as directed on box.
Color it by adding several drops of green food coloring while mixing.
Let the pudding set for about one hour.




While you’re waiting for the pudding to set, crush half of one box of Oreo cookies in a large ziplock bag, set aside for later.
When brownies are cool, it’s time to start building your layers.
Begin by crumbling half of the brownies into the first layer on the bottom.

Now, layer half of the green pudding on top of the brownies.

For the next layer, make a ring of Fruity Pebbles, and add your crushed Oreos to the inside.
This way you’ll only see the rainbow-colored cereal on the outside, and still get the yummy goodness of the Oreos on the inside of the layer.



Then, add about half of the Cool Whip for the next layer.

For the final layers, repeat brownies, pudding and Cool Whip.

Finally, sprinkle the Fruity Pebbles on the top of the Cool Whip.


To make your rainbow trifle a little more festive for St. Patrick’s Day, you can add the chocolate coins wrapped in gold foil in cool designs on the top.

Ingredients
- 1 box of family size brownie mix

- When brownies are cool, crumble half of the brownies into a layer on the bottom.
- Layer the green pudding on top of the brownies.
- Add Fruity Pebbles cereal in a ring around the outside of the next layer.
- Add crushed Oreo cookies inside the Fruity Pebbles ring.
- Add a layer of Cool Whip on top of cereal & cookie layer.
- Repeat layers in order of brownies, pudding, and then Cool Whip, sprinkling the Fruity Pebbles on the top.
- *Optional- embellish with chocolate gold coins
- Serve cold.
